A Blueberry Morning
You know those mornings when you wake up feeling on cloud 9..
You’ve just had the most lovely dream, you feel well in your body and you glide through your kitchen while Etta James plays in the background. It was one of those mornings, and I hadn’t had oats in so, so long. I decided to put together this yummy bowl of oats, and it’s definitely one for the books!
I also have to say, I am not the best at measuring as I cook, but I’ll try to leave estimates as best as I can :)
Okay, let’s begin, shall we?
Yield: 2
Prep + Cook time: about 10 - 15 mins
Ingredients:
2 cups rolled oats flakes
3 cups oat milk
1/2 cup of blueberries
1/2 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1.5 tablespoons of blueberry jam or preserve. I used this one from Fortnum and Mason, it’s so delicious! - Wild Blueberry Preserve
1.5 tablespoons of peanut butter. I used this one, I love the extra crunch - Whole Earth Crunchy Peanut Butter
Sliced bananas
Some pistachios
1 teaspoon of honey
Steps:
Combine rolled oats, oat milk (feel free to add a little water), cinnamon and nutmeg in a small saucepan and turn the heat to medium-high.
When it begins to cook, add in the 1/2 cup of blueberries (or more if you’d like!). I add this in later on when it starts to cook, so it preserves the taste and some form of the blueberries
Add in the honey
Bring to boil and then turn the heat down to low/medium and continue to stir as it thickens
When it gets to the desired consistency, remove from heat and serve in a bowl right away
Decorate your lovely bowl with the sliced bananas, blueberry jam/preserve, peanut butter and pistachios!
